Meet the Chefs
Red Gravy • Chef Eric Brenner
Brenner’s culinary pursuit began at an early age working in restaurants in St. Louis’ famous Italian neighborhood, The Hill. He holds many accolades including features in St. Louis Magazine, Bon Appetit, “Chef of the Year” in Sauce Magazine and has been nationally recognized for his win in the Food Network’s 2014 season of Guy’s Grocery Games. Brenner opened Red Gravy in January 2016 as the Owner and Executive Chef, locally sourcing ingredients and providing excellent customer service in Downtown Colorado Springs.
Colorado Craft Tejon Street Social • Chef Mario Vasquez
Born and raised in Vacaville, CA, Mario’s culinary influence is rooted in his very young memories of family gatherings. A graduate of Le Cordon Bleu Sacramento, Mario began his culinary career in Napa, starting as a line cook and rising quickly through the ranks to Sous and Executive chef status. Chef Mario opened Colorado Craft Tejon Street Social in 2017 and continues to polish his cuisine and define his identity in the Downtown culinary scene.
Oro • Chefs David Ortiz & Casey Weeks
Oro is an upscale, family-style Italian restaurant located inside the historic Mining Exchange Hotel in Downtown Colorado Springs. It blends Old World Italian culinary traditions with local Colorado ingredients. Oro’s menu was developed by James Beard Award nominee Chef Aaron Barnett.
